Les Chemins is first and foremost the fruit of an encounter: that of a Chef, Romain Meder, with a place, Primard. Here, plants are featured in dishes that echo Primard's gardens and the daily dialogue with Gérard, our gardener. Avoiding the idea of a deliciously boring dish, he performs a balancing act in each plate, rightly blending roundness with astringency, softness with roughnesś, aciditý with bitterness.
Plant is king: the philosophy of Chef Romain Meder
Fermented beetroot, courgette with melon wine, flaxseed tartlet, kiwano... are expressed in all their entiretý and emphasise the extent to which nature is self-sufficient. Iodine also plays a key role in the creativitý of an oyster sausage or a monkfish liver appetiser. There's no need here for an overkill of "noble" products when you have the science of simple products.
